Cherry-Lime Freeze

Cherry Lime Freeze

Growing up our family frequented a local dairy for ice cream treats. A favorite for most of us was the cherry lime freeze. My dad was so happy to figure out how to make them at home that it became a regular summer treat in our home. I was happy to eat them no matter who was making them. Well, my dad and the dairy are no longer with us, but just thinking about this super-refreshing treat takes me back to the good-old-days.

These amounts might serve two, unless you love the freeze as much as I do.
*16 oz. vanilla ice cream (don’t use the French vanilla, it just isn’t the same)
*1/3 c. Sprite
*Juice of about 1-2 limes, I like it very tart...
*2 TBSP. cherry syrup (this is sold at ice cream shops or look for it by the ice cream machines at stores like Target and Walmart)

Mix in blender or to really recreate the ice cream shop feel, use your immersion blender. Serve with lime wedge and a tall spoon.

I am going to try making this in my ice-cream maker...so I will have a lot more to enjoy!
