Pumpkin Spice Chocolate Chip Cookies

About a year ago, Carlee showed up to a family gathering with a plate of peanut butter cookies. "Try these," she challenged us. We don't make a habit of turning down food, so we did, and although they were ok, there was something missing in the texture department. "They are just peanut butter, sugar and an egg. You don't really need all that other stuff."
Although I love finding shortcuts in the kitchen, I just like all the other stuff. A few weeks ago I heard a similar conversation: "Just a can of pumpkin, a box of spice cake mix and some chocolate chips." I tucked that tidbit away to share with Carlee and pulled it right back out this morning when I realized I forgot to make treats to take on some visits this morning.

Here is the recipe:
1 small can pumpkin
1 box spice cake mix
Stir to combine thoroughly. Add 1 c. chocolate chips. Drop by teaspoon onto cookie sheets.

Bake at 350 for 12 minutes.
These were pretty good considering how little there is to the recipe. They were a lot more like a cake than I thought they might be. They also didn't flatten much, so they were really pumpkin cake balls.
I melted some chocolate chips in the microwave for 1 minute and drizzled over the top.
I'd make them again if I was pressed for time, but might add an egg or something to change the texture...I guess I have texture issues with shortcut cookies.
