This is the first cookie I remember baking by myself. I don't know where my mom got the recipe, but I love it.
1 c. brown sugar
1 c. white sugar
1 c. shortening
1 c. peanut butter (creamy works best, but whatever flavor you like will work...except natural PB seems to make these too runny)
1 egg
2 TBSP. milk
1 tsp. baking soda
3 c. flour
1 tsp. vanilla
Cream together sugars, shortening and peanut butter. Add egg and milk and stir to combine. Slowly add soda and flour and incorporate well. Stir in vanilla. Scoop by tablespoon and roll into balls. Place on lined baking sheet and use either your pointer and middle finger or a fork to lightly press down (if you don't want holes in the middle, have your 3-year-old use a fork).
Bake at 350 for about 12 minutes until just set. Let cool on tray for 2 minutes and remove to cooling rack.
