
For as long as I can remember my mom has been making batches of this sweet treat every Christmas. I'm pretty sure anyone who has ever lived near her has received a plate or bag of her caramel popcorn at some time or another.

2 c. brown sugar
1 c. butter
1/2 c. light corn syrup
1 tsp. salt
1 tsp. soda
1 tsp. vanilla
6 qts. popped popcorn
Combine sugar, butter, and syrup in a medium saucepan. Bring to a boil over medium-high heat, and continue to boil gently for 5 minutes. In a small bowl, combine salt and soda and stir into sugar mixture. Stir in vanilla and toss with popcorn. Spread evenly in jellyroll pans and bake at 250 for 1 hour, stirring every 15 minutes.
