My BIL & SIL are dedicated enough to make these fun treats to celebrate the often-overlooked Groundhog Day. The first time they made them, my 10-month-old devoured it (and the cupcake wrapper).
Start with a cupcake. Give a good spread of frosting and some cookie crumbs for dirt effect. The groundhog is made from a Mounds bar, mini M&Ms and frosting for ears and cheeks. Frosting for eyes and belly fur. The cute nose is a carefully cut fruit snack. I'm pretty sure this works best to assemble the hogs before standing them in the frosting. If you're making these, recruit some help because it takes 2 people the better part of the day to make 2 batches! Thanks Brad & Kim, they sure are fun!
