Buttermilk Pancakes

These are the best buttermilk pancakes I have ever had.  When buttermilk goes on sale, I buy it and freeze it in portions of 1 1/4 cups so I can just pull a portion out of the freezer and make these on a Saturday morning. They're every bit as easy to make as Bisquick pancakes and about a gazillion times better.  I will never make pancakes from a mix again. 

INGREDIENTS

  • 1 1/4 cups all-purpose flour
  • 1 egg
  • 1 1/4 cups buttermilk
  • 1/4 cup white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 cup vegetable oil
  • (Sometimes I add a little flax meal if I feel like getting my health on. You can't taste it.)

DIRECTIONS

  1. Preheat a skillet over medium heat. Combine all ingredients in a blender. Puree until smooth.
  2. Pour batter onto the griddle, to form 5 pancakes. Flip pancakes when edges appear to harden. Cook pancakes on other side for same amount of time until golden brown.
