Jean's Potato Salad

This guest post is from our Mom. She is a great cook and has loads of these family recipes. My husband might tell you this potato salad is one of the reasons he asked me to marry him. - K

This potato salad is one of those family favorites that really didn't really have a recipe-until now. My mom has made it for years and it is the one thing that is on the table at all family gatherings. She taught me how to make it but the exact measurements have never been written down. When I made it for Easter dinner I measured everything and took pictures so the family will have Potato Salad for generations to come.

Jean’s Potato Salad (I make a large bowl that typically serves 12-15)

8-10 medium-large potatoes (Red have a more firm texture but I use whatever I have)
Boil-skins on- for about 50 minutes, drain and cool.
12 large hard boiled eggs, cooled
4-5 green onions, sliced
1 tomato, diced (optional)

Peel and dice the potatoes into a large bowl.
Peel and dice the eggs, leaving one to slice for a garnish.Add Image
Add the green onions and stir gently.
Salt and pepper to taste.

Dressing:

1 ½ C. Miracle Whip
1 C. milk
1/8 tsp. paprika
Mix together until smooth—no lumps. This should be the consistency of a thinned paste.
Mix this dressing with the vegetables and eggs gently.


Add the tomato if desired.
Garnish with the last egg, sliced.
Spread a little of the dressing on each egg slice and sprinkle with paprika.

Keep refrigerated and enjoy!
