I've been able to attend some cooking classes at my favorite Mexican restaurant in town. We've sure been enjoying eating like we live south-of-the-border. So, the next few posts will be some of the great recipes I've picked up. We'll start with a delicious drink.
*1 pineapple or 1 can of pineapple (in juice not syrup)
*1 c. lemon juice (this is quite a few lemons, but you can buy lemon juice in the juice aisle)
*2 c. simple syrup
(For simple syrup, boil together equal parts sugar and water until sugar is dissolved. Refrigerate.)
Puree juices and syrup together in blender and of ice and water to taste and make about 1/2 gallon. You could use any fruit you'd like. We've had strawberry and the chef prefers cantaloupe. I'm also thinking to try watermelon soon.
