My hubby has acquired a taste for flan. I love the flavor (caramel), but my palette has yet to embrace the texture which is somewhere in the middle of creme brulee, pudding and cheesecake. The basics, it is a caramel custard with soft caramel on top as opposed to the vanilla custard with crunchy broiled sugar you'll find in creme brulee. In any event, it is quite popular in South America and hubby insisted we serve it at the fiesta.
But since it was his suggestion, I let him make it...and he used a box mix...which is fine...
Start with a box of instant flan. Follow the instructions, if you luck out you'll find them in English. Ours called for 4 c. milk, boiled with the powder mix for a couple minutes. Pour caramel in bottom of the bowl, pour custard on top and let set. Invert just before serving. I prefer them when they are in individual custard cups.
