Thanks to a few too many power outages in these parts lately, I actually had to do my weekly ironing while watching live TV instead of my DVR'd shows. Food Network was airing a show called Giada at Home and Giada was prepping for a roadtrip/picnic, which was a little cheesy because I think they were just driving across town to go to a park. Regardless, she made this raspberry smoothie to drink on the road and I made it for our mid-morning snack today.
My usual smoothies are just a random mix of whatever frozen berries I have on hand, some yogurt, maybe some sherbet and juice...blend and serve. Giada's version is a bit lighter (from the ice and syrup), sweeter and quite refreshing and I loved the vanilla taste. I am going to make popsicles out of this for the kids and I to enjoy in this heat.
*2/3 c. simple syrup
*1 c. greek yogurt
*1 c. frozen raspberries
*1/2 c. apple juice (I used cranberry because I had it on hand)
*2 tsp. vanilla extract
*2 c. ice
Put all ingredients into a blender.
Blend all ingredients and enjoy.
