We're pretty big fans of desserts and chocolate around here and although I love to order molten chocolate cakes when we go out (especially on cruises), but I've never made them. I guess I assumed they would be difficult or temperamental or something, but I found this recipe and decided to go for it. So we enjoyed them for an early anniversary treat.
*4 squares semi-sweet baking chocolate
*1/2 c. butter
*1 c. powdered sugar
*2 eggs
*2 egg yolks
*6 TBSP. flour
*2 c. heavy cream (for topping)
*2 TBSP sugar (for topping)
Preheat oven to 425. Grease 4 custard cups and place on baking sheet. Put butter and chocolate in a medium bowl, and microwave on high for 1 minute. Whisk until chocolate melts completely. Stir in powdered sugar until well combined. (Need a quick sugar rush, dip a spoon in that goodness and lick). Whisk in eggs and yolks. Stir in flour. Divide batter between the four custard cups. Bake 14 minutes. Remove from oven and let stand for 1 minute. Invert onto plates and serve with whipped cream or ice cream...or both!
