Roasted Red Peppers


If your pepper crop did better than mine this year (or if you're finding red peppers ridiculously cheap at market) here's one of my favorite things to do with them--roasting them. It is very easy and much cheaper than the little jars at the store.

Wash peppers. Cut in half lengthwise and remove seeds and ribs. Line a baking sheet with foil and preheat the broiler on your oven. Lay pepper halves skin side up on foil and broil until good and charred, about 20 minutes.
Remove from oven and allow to cool. Remove skin from peppers and use or freeze.
