Breakfast Quinoa

I've been scrambling this past week.  I don't even know how we made it to the middle of December.  I've had a few too many days of leaving early and not getting back until late (as in I felt so good yesterday when my sister told me I looked exhausted), which has reminded me how important a solid breakfast is.  This recipe comes from Martha's Living and is a great alternative to oatmeal for me.

*2 c. low-fat milk, plus more for serving
*1 c. quinoa, rinsed
*3 TBSP. brown sugar, plus more for serving
*1/8 tsp. cinnamon, plus more for serving
*1/2 pint fresh blueberries (we've been using dried and I'm sure frozen would work as well)

Bring milk to a boil in a small saucepan. Add quinoa, and return to a boil. Reduce heat to low, and simmer, covered, until three-quarters of the milk has been absorbed, about 15 minutes. Stir in sugar and cinnamon. Cook, covered, until almost all the milk has been absorbed, about 8 minutes. Stir in blueberries, and cook for 30 seconds. Serve with additional milk, sugar, cinnamon, and blueberries if desired.
