*1 cube butter
*1/2 lb. spaghetti
*1 c. mizithra cheese, grated
In a large pan, cook spaghetti as directed. Meanwhile, in a saucepan, melt the butter over medium heat until it reaches a slow boil. Stir constantly as it starts to foam, continue for about two minutes, until the butter starts changing to a brown color and smells nutty. Remove from heat and strain the solids from the butter. Drain pasta, return to pan and toss with butter. Divide pasta among four dishes and top each with 1/4 c. cheese.
