Fried Zucchini

Ok, I'm hoping not to do another zucchini post for a while, but if you have some of this abundant summer veggie, make sure to puree and freeze for a yummy recipe I'll post about when we aren't so zucchini'd out! In the meantime, we sure enjoyed this recipe.

I’ve always had the philosophy that nearly any vegetable will taste good if it is breaded and fried. This is especially true of zucchini. As a child this may have been the only vegetable I ate for years and only if it was prepared this way:

Fried Zucchini

  • Zucchini (1 will serve about 3 people)
  • 1 egg, beaten
  • 10 (or more) soda crackers, crushed (just use your hands to make the crumbs)
  • 1 tsp. pepper
  • 1 tsp. seasoned salt (I use Emeril's Essence)
  • 1/2 tsp. garlic powder

Wash zucchini and slice into round discs approximately ¼ in. thick.
Beat egg in a bowl and mix the crackers and seasonings in a different bowl.


Take each zucchini slice and dip in egg, transfer to cracker bowl and turn to coat evenly.

Let rest on a plate for a minute while you heat up a skillet with 2-3 TBSP canola oil.

Place zucchini in the pan and fry on medium-high heat until golden (about 1-2 min/side). Remove from pan and serve immediately.
