I’ve always had the philosophy that nearly any vegetable will taste good if it is breaded and fried. This is especially true of zucchini. As a child this may have been the only vegetable I ate for years and only if it was prepared this way:
Fried Zucchini
- Zucchini (1 will serve about 3 people)
- 1 egg, beaten
- 10 (or more) soda crackers, crushed (just use your hands to make the crumbs)
- 1 tsp. pepper
- 1 tsp. seasoned salt (I use Emeril's Essence)
- 1/2 tsp. garlic powder
Wash zucchini and slice into round discs approximately ¼ in. thick.

Take each zucchini slice and dip in egg, transfer to cracker bowl and turn to coat evenly.

Let rest on a plate for a minute while you heat up a skillet with 2-3 TBSP canola oil.

Place zucchini in the pan and fry on medium-high heat until golden (about 1-2 min/side). Remove from pan and serve immediately.
