Applesauce Chocolate Chip Cookies

When I was in junior high my best friend shared her family's family recipe for these delectable treats. I hope Grandma Strong isn't too upset that I'm sharing it with you. These are, without a doubt, my favorite cookies. I love the cinnamon flavor, the almost cake-like texture, the chocolate chips and the frosting. This recipe makes about 60-70, perfect for sharing.
Cream together:
*2 eggs
*1 1/2 c. sugar
*1 tsp. salt
*1 c. shortening

Mix together and add to the above mixture:
*2 c. applesauce
*2 tsp. baking soda
Add:
*1 tsp. cinnamon
*1 tsp. nutmeg
Blend well and stir in:
*4 c. flour
*1 c. chocolate chips (or 2 if you make them like I do)
Drop by tablespoon onto a parchment lined baking sheet. Bake at 350 for 10-12 minutes, but use the oven light and make sure they look 'set' or not gooey in the middle before you take them out. The edges should be golden brown. Remove from the tray and allow to cool on racks. You could eat these at this stage and you would love them, but why not keep the goodness going and frost them with chocolate frosting. You will simply love them.
