As far as I'm concerned chili is probably (or should be) the official food of October. My MIL was made some this week and was kind enough to share. I made some cornbread muffins to go with the chili. I wish I didn't love cornbread so much. I ate six muffins...with a lot of butter...and some honey...they were yummy.
Mix together:
*1 1/4 c. flour
*3/4 c. cornmeal
*1/4 c. sugar
*2 tsp. sugar
Add and stir until incorporated:
*1 c. milk
*1/4 c. vegetable oil
*1 egg, beaten
Pour batter into greased or lined muffin tins (makes 12). Bake at 400 for 15-20 minutes.I got too anxious and pulled them out about a minute or two before they got that perfect golden brown color. That obviously didn't stop me from eating them.

Mmm... cornbread muffins are my favorite muffins. I'm suddenly in the mood for stew and cornbread.
