I made these for the toddler's pre-school snack bucket and was pretty pleased with them. The recipe comes from Everyday Foods and I would recommend these as a 'healthy-ish' snack.
Combine in saucepan and stir over medium heat until mixed and loose:
*1/3 c. honey (spray measuring cup with cooking spray before using and the honey will come right out)
*1/4 c. peanut butter
*2 T. butter
Stir in:
*1 c. Rice Krispies
*1 c. oats
*1/4 c. dried fruit (I put in about 1/2 c. Craisens)
*(I also added 1/4 c. white chocolate chips for good measure...you could use nuts or something or nothing...)
Once combined drop by teaspoon into mini baking cups (if you have the teaspoon-size cookie scoop, this is a great time to use it) or onto wax paper. Refrigerate until set (mine took about 20 minutes) and store in airtight container in fridge for up to one week.
These were very easy and tasty. The recipe said it would make 24, but I got 30 out of it, probably because of the extra fruit and chips I added.
