Twice-Baked Potatoes

These are a great side dish for just about any meal. It is amazing what a little extra effort (and cheese) can do for the potato.
Scrub potatoes clean (plan 1-2 potatoes per person). Pierce with fork and bake at 350 for about an hour until tender, or grab your muffin tin and save some time.
When potatoes are done, remove from the oven and cut in half (careful, they're HOT). Use a spoon to scoop out all of the potato into a mixing bowl. Be as careful as you can to keep the 'skin' intact. Add milk and butter and mix to make mashed potatoes. You can also add chopped bacon at this point. Scoop the mashed potatoes back into the skins and place side-by-side in a baking dish.
Top each potato half with a good slice of cheddar cheese, sprinkle with salt and pepper and put back into the oven.
Bake another 5ish minutes until the cheese in good and melted.
These reheat well and are a favorite with our little ones.
