Black Beans

We often have this as a side when we're dining on Latin/South American food. I usually make more than I need and use the leftovers to make burritos or quesadillas for lunch.
*1 can black beans, drained, not rinsed
*2 cloves garlic, minced
*1-2 tsp. ground cumin
*1 tsp. olive oil
*1/3 c. tomato juice (or some salsa)
*3/4 tsp. salt
*1 tsp. oregano
*1/2 tsp. coriander
*1/4-1/2 tsp. cayenne pepper
*2 TBSP. fresh cilantro (optional)
*2 TBSP. chopped red pepper (optional)

Combine all ingredients in a saucepan and simmer over medium-low heat about 20 minutes. This is great if you can leave it in a slow-cooker a few hours on low to really combine the flavors.
