*Nilla Wafers (about 2 dozen)
*2-3 TBSP. fresh squeezed lemon juice
*1/2 TBSP. fresh lemon zest
*1/2 c. powdered sugar
Stir juice, zest and powdered sugar together until smooth. Dunk each wafer into the lemon glaze and let set on a cooling rack.

Lemon Cooler Cookies
So the Lemon Cooler cookies Keebler used to make have disappeared from the shelves at the stores, but here is my replacement. It will take less than 5 minutes to make and the oven never turns on, so it fits my requirements for good summer eating!
