We're big fans of south-of-the-border food at this house. We'll be eating Mexican food all week. I made a huge batch of my enchilada sauce this afternoon to get us through the next few days. We kicked off the celebration with these (don't know why I didn't take a better picture for this post) and tomorrow we'll be enjoying one of my favorites. We'll likely be grilling up some fish tacos and a new recipe for carne asada to round out the week.
