Cafe Rio Pork

Here's a copycat recipe my SIL uses for Cafe Rio Pork (Salad). We just used the pork on tacos for our fiesta, but I'll add the dressing recipe at the bottom if you're interested in the salad.

*5-6 lb. boneless pork roast
*1 TBSP. cumin
*1 c. brown sugar
*20 oz. Coke
*12 oz. red taco sauce
Place roast in a crock pot. Pour 2 c. water in, cover and cook on low for 4-6 hours, until tender. Drain liquid. Cut off any fat and shred pork meat. Add remaining ingredients, stir together and cook on low another 1-2 hours. Serve on tacos, burritos or salad.

Salad:
*Lettuce
*Pork
*Cilantro
*Cheese (cotija or cheddar)
*Tortilla chips
*Lime wedge

Dressing:
*3 fresh tomatillos, quartered
*1 pkg. ranch buttermilk dressing mix
*1/2 c. mayo
*1/2 c. sour cream
*1/2 c. buttermilk
*1 c. cilantro
*3 cloves garlic, crushed
*1/8 tsp. cayenne pepper
*2 TBSP. lime juice
Combine all ingredients in a blender. Chill one hour and serve over salad.
