Chicken in Foil

I made these to go with the potato packets. The 4-yr-old wanted rotisserie chicken, but I wasn't interested in heading to the store to grab one. I don't have a spit and really just needed enough to feed 1 and 2 halfs, so here's what I did.

Start with a square of foil. Piled on 5 chicken tenders (yes, they were still frozen). Sprinkle generously with sea salt and fresh cracked pepper. Add a little seasoned salt (I use Emeril's Essence) and some paprika. (McCormick's makes a rotisserie chicken spice mix that would make this even easier). Seal the foil packet and place on baking sheet. Bake at 375 for 45 minutes. These turned out very tender and well flavored. We'll have them again, because who can argue with cleanup that easy...place foil in recycle bin...done.

Note: We've also done this chicken flavored with garlic, rosemary and pepper. I also started opening and drain the foil packet for the last 5 minutes of cooking to brown the top.
