I've been feeling a little sad that we haven't gone camping this summer, so I was thinking about a pretend camp out, but I'd still have to get out the tent and swelter in the lack of air conditioning. So we settled for foil dinners. I found this
recipe for potatoes and made my own little chicken packs to join the meal.
I can't believe how easy these were to make (no clean up). They were so tasty my 4-yr-old declared them her favorite potatoes. You really ought to try these.
Makes 1 packet:
*1 russet potato
*chopped onion
*1 clove garlic, cut in thirds
*sprig of fresh rosemary or chopped parsley
*1-2 TBSP. butter
*fresh cracked pepper
*Kosher salt
*1-2 tsp. cream
Grab a square of foil (probably 10"ish). Give the potato a good scrubbing. Cut potato into cubes by slicing lengthwise into thirds, turn those slices on the side and cut in half.

Then cut those sticks into cubes. Place potato cubes in the center of the foil.

Top with a handful of onions, rosemary, and the butter. Sprinkle with salt and pepper and drizzle cream over top.

Seal foil into a tight packet.

Place packet on a baking sheet and bake at 375 for 45 minutes.
