Chicken & Herb Soup

This time of year we could eat soup just about every day. This is a very easy soup that takes almost no time to put together. This amount works for our family of 2 adults and 2 little kids.

*1 c. shredded rotisserie chicken (if you don't have a cooked chicken, saute about 3/4 lb. chicken breasts or tenders in a little oil over med-high heat until cooked)
*1 tsp. oil
*1/2 white or yellow onion, finely diced
*2 tsp. flour
*1/2 tsp. thyme
*1/2 tsp. parsley
*1/2 tsp. garlic powder
*1/2 tsp. pepper
*1 can great northern beans, drained and rinsed
*2 c. chicken broth

Heat oil in a soup pot over medium-high heat. Stir in onion and saute; add chicken. Stir in flour; then add dry seasonings. Add beans and broth. Reduce heat to low and simmer for about 20 minutes, stirring occasionally.
